"Tea" Beer

Partial Mash, 5 gal.

Mash 152F for 60 min.
2 lbs. 2-Row
2 lbs. Wheat
1/2 tsp. Cinnamon (hot-side aeration prevention)

Collect wort. Top brew pot to 3 gallons and bring to boil.

Boil 60 min.
2 oz. Hallertaur 4.2%AA (40min)
1 lb. Honey (30min)
2 oz. whole Chamomile Flowers (30min)
3 lbs. Wheat DME (10min)

Cool wort. Add to fermenter, fill to 5 gallons, aerate, and pitch yeast.

Wyeast 1010 or White Labs WLP320

Ferment at 70F for 11-14 days. Bottle with 3/4 cup corn sugar.
