0.75 c. Muntons Light DME (yeast starter)
Mash grains 1 hour with 5 gal. water at 152°F (strike temp: 170°F). Sparge with 7 gal., 170°F water. Collect 6.5 gallons. Boil 60 minutes using a "continual-hopping" method (i.e., a pinch of hops every minute or so).
Continual-Hopping Schedule
0-25 min: .75 oz. Chinnook
25-35 min: .75 oz. Cascade
35-60 min: .5 oz. Chinook
60 min (flameout): .25 oz. Chinook and .5 oz. Cascade
Add Irish Moss for last 15 minutes. Primary fermentation: 1 week, 70°F. Rack to secondary and dryhop with .5 oz.
each Chinook and Cascade. Secondary fermentation: 2 weeks, 65-70°F.
