Ingrediants for a 5 gallon batch:
6.5 Pounds Pale Malt (2-row, Great Britain) 0.75 Pounds Wheat malt 1.25 Pounds Crystal 20L 2.5 Ounces Chocolate Malt 0.75 Ounces Northern Brewer Hops for 60 minutes 1.5 Ounces Styrian Goldings Hops for 10 minutes Yeast White Labs - California Ale (WLP001)
The target IBUs is 35-40 with an SRM of about 12.
Fuggles may be substituted for the Styrian Goldings. Briess malt is acceptable as a substitute for the British pale malt.
Mash at 152F until fully converted (do a starch conversion test) or rest for 30+ minutes.
Pitch yeast at 68F. Primary fermentation for 5 days then transfer to bright tank or secondary for 7 days. Keg and let sit for 12 - 18 days to cask condition.
